Brussels Foil-Pack

Ingredients:
10 Brussels sprouts (or 14, if small), halved
4 baby red potatoes (about 10 oz.), cut to same size as halved sprouts
1/2 cup chopped onion
1 tsp. olive oil
1 tsp. dried rosemary
1/2 tsp. minced garlic
1/2 tsp. kosher salt
Directions:
Preheat oven to 400 degrees. Combine all ingredients in a bowl and mix well. Set aside. Lay a large piece of heavy-duty foil in front of you on a baking sheet. Place veggie-potato mixture in the center of the foil, and spread it out a bit. Place another large piece of foil over the veggie-potato mixture. Fold together and seal all four edges of the two foil pieces, forming a well-sealed packet. Place baking sheet in the oven and cook for 30 - 35 minutes, until veggies are tender. Allow packet to cool for a few minutes, and then cut to release steam before opening it entirely.
